I can’t believe it is Monday already! It seems I just posted that wonderful Spinach Quiché recipe! Did you try it? I did….and it was delicious as usual! Today’s recipe is one that I LOVE…LOVE…LOVE!! OK…so I LOVED…LOVED….LOVED…the Spinach Quiche too!

This is dinner tonight at the Martin house!
Mozzarella, Tomato and Basil Panini
1/2 cup olive oil
3 tablespoons balsamic vinegar
1 large garlic clove, minced
10 ounces thinly sliced whole-milk mozzarella cheese
12 tomato slices
12 large fresh basil leaves ( sometimes I make Pesto and add that instead of Basil leaves!)
1 16-ounce ciabatta bread (13×6 1/2×1 1/2 inches), halved horizontally
Whisk olive oil, vinegar, and garlic in small bowl to blend; season dressing to taste with salt and pepper. I drizzle both sides of the bread with the dressing before layering with mozzarella, tomatoes, and basil, or Pesto. Press top of bread over. Cut bread equally into 4 sandwiches.
I’ve been told you can do this on an outdoor grill…. I have not used an outdoor grill. I have used a stove top grill or a frying pan. Either way you decide to make this be sure to have a big spatula or one of these presses like I have to push it down and get that Panini look! Unless you have a Panini press! La dee da! haha
I have also been known to use a heavy cast iron frying pan to lay on top of the bread as it cooks. Grill and press for about 5 minutes per side. You may not get the grill lines…but trust me, it is GOOD! Bon Appetit!
