Meatless Monday!

Have you heard of Meatless Monday? If you have; do you Observe?

I first heard of Meatless Monday only about 6 months ago, my family observes the day as such…..sometimes!  {SMILE}

In the spirit of Meatless Monday I will offer a recipe! One of my favorite “meatless” recipes here….for your pleasure! Hopefully  your pleasure……

I had to “borrow” this from the internet, Zabar’s to be exact! I can’t seem to find my pic! Trust me when I say that mine looks very much like this one! If I find mine I will switch the pic out ASAP!! And thank you to Zabar for the temp. pic!

Spinach & Goat Cheese Quiche

This is a recipe that was given to me by a friend and I adapted to make it my own.

Ingredients
4 large eggs (room temp)                                                                                                                                                                                                 1 cup milk
1 1/3 cup grated Goat cheese ( I kind of crumble it. I also add 1/2 cup Cheddar)
½ small onion and  1/2 a small Red Bell Pepper thinly sliced
1 clove garlic minced
1 cup fresh spinach (uncooked) chopped (I chop very,very small..not quite minced)
Olive oil
Premade deep dish pie shell
Salt and pepper to taste

Preparation

1. Preheat oven to 375 degrees.

2. Into the pie shell place half of the grated cheese and the spinach then put aside.

3. Sauté the onion and Bell pepper in olive oil on medium/low heat until translucent ( onion)  and soft.

4. Add the garlic and sauté for one minute. Do not let it brown or burn…it will become bitter. Add to pie shell.

5. In a mixing bowl beat together the eggs and milk. Add salt and pepper to taste (This depends on the type of cheese used, salty cheeses won’t need much added. WHIP! It will make a better Quiche if you whip the eggs very good)

6. Add the egg mixture to the pie shell and top with the remainder of the grated cheese.

7. Bake for 45 minutes or until a pick inserted in the center comes out clean. The top should be lightly browned. Let cool for at least 10 minutes.
